I have a feeling youre not a aware of the wide variety of non-animal based food that contains protein.
But soy isn't nearly as fun :( Beans make your tummy make noises!

Nah, I just mentioned one out of many alternatives (and I admittedly forgot about soy for a moment). You can eat soy, quinnoa, beans, almonds, cauliflower, peas etc etc. If you like milk products, yoghurt and cottage cheese are also great alternatives.

OT:  I'm fairly small and light but I aim for 3000+ calories a day, which is kind of hard with an empty pantry

If you were trying to lose weight, how many calories would you recommend eating per day/what to eat? (For a person that gains weight easily but loses it with difficulty)
Also, would it hurt if you lost over 2-3 pounds a week?
1500 - 2500 calories a day.
Cardio. Sleep. Hard work.

It would not hurt if you lost 2 -3 pounds a week.

But I wanna be otter mode. I just want to be like 195 5% BF. Right now I'm 164 and like 12% BF. So I really want the weight to come on gradual and mostly muscle I'm not like in a rush to bulk up my fat and get 240 so I can bench 400. I lift primarily for aesthetics. I definitely need to put 100x the effort into my diet if I want results though you're right about that.
Its a good goal buts thats going to take a long long long long long time.

Like a few years work man. 100% possible though

if you're the type of person who's eating little you're not going to gain muscle.  protip: muscle weighs more than fat.  if you're going to gain muscle you're going to have to eat a lot.
