Swordfish steak isn't the nicest when it's full of juices in my opinion.

But swordfish > beef.
I've heard that swordfish has a high ammonia content and unless eaten very fresh, it tastes like stuff.

I prefer fish over steak anyways though, and I eat that raw.

Well done, wood fire grilled, and if there is some, soul seasoning.

I like medium to well done steak the most, a bit of juiciness helps the flavor as well.

"Undercooked" is not a valid reason to not like medium-rare or to eat well done. It's simply just wrong. Rare isn't under cooked, well done is just over cooked.

Nah, I like some meat with my blood.
Rare is considered the "perfect steak", the correct tenderness with the right amount of juicyness.


I like medium are and medium. Also it depends on the meat and what level of spiciness you want to achieve.

Rare is the only option. It's hard to think of how dry and tasteless well done is.
And no, it's not unhealthy. Any bacteria would be on the surface of the steak, which is the part that actually gets cooked.
