It's considered acceptable to mock Christians in the United States because they're the major religious denomination. That being said, it's not entirely morally sound but no one bats an eye at it because Christians are not being actively marginalized in society like other religions. It's the same reason why no one cares if you call someone a cracker.

The original idea for the "Cartoon wars" episodes was that Matt & Trey would make Mohammed jokes, but have the animation style of the episode copy Family Guy so the terrorists would accidentally bomb their studio instead of Comedy Central.
I think Antisemitism is a much more prevalent force throughout history, with Pogroms, Riddler, and a bunch of other people basically persecuting Jews worse than any other religion, so I think there's a hyper sensitivity to joking about Jews (in the view of some people of course)
Are you kidding? I make fun of Jews on a daily basis just casually. They're probably the religion I casually lash the most. I even do it to Jews' faces and I've never gotten one even slightly offended reaction.
