Even story? So you would rather have:
a rehash of the older games
"Hey you are ghoul, go in there and turn on the pump."
Ghoul: "No forget that."
"Fawkes plz :3?"
Fawkes: "okay"
Ending: Fawkes was the real hero in the end and the water was made drinkable once more so your piss wouldn't glow in the dark.

vs

A story of group conflict and history
"This Dam belongs to us now!"
Ending: "The courier has brought peace temporarily in the region for the time being. Your actions has shaped the future for many. However man has yet to learn from his ancestors previous mistakes as the courier fades into obscurity as part of the wasteland. War never changes."

New Vegas has hardcore mode which is really awesome.

@OP I've played the everloving stuff out of both games, both are great, New Vegas is amazing. Go for that one, complete/ultimate/whatever it is edition if possible.

i've played both but i wasn't able to continue with nv for some reason

i think the voice acting was getting to me, but that's a minor complaint. it was just really weird at the time.

i could tell right away that NV has more to it than 3 does though

You must be either trolling or stupid. New Vegas is superior to FO3 in every conceivable way aside from the bugs.

While I do enjoy New Vegas a ton more, not even including the modding community (Which IS a ton better than 3's), I feel like 3 captured the apocalyptic aspect of the game a little better. I mean, New Vegas's story line didn't really permit a very wasteland-ish territory, they could've done a lot more to the rural areas of the game.

That's because the developers of F3 never got the main theme of Fallout. Calling Fallout "post-apocalyptic" as it's used today is inaccurate. Like Harm said, the earlier Fallout games (and New Vegas) are more "post-post-apocalypse" in that it's not mainly about surviving the effects of the apocalypse but more about rebuilding society and the way people react to and interact with each other in this "rebuilding of civilization."

Well Fallout 1 being post-apoc thunder dome style anarchy and fashion. Fallout 2 where much of the wasteland is starting to settle down as civilization and technology make their come backs. One of the themes of the games is not the wasteland itself, but how civilization has changed and continues to change and adapt to the new world.
