in warhammer 40k, there are two types of races,
god races
and nearly god races
It's because while video games and movies are about telling a story, there is almost no official story in 40k. There are some major events that happen but for the most part, it's just a setting. A canvas for you to create your own stories in through the exploits of your dudes on the tabletop or your party in one of the RPGs. And beating down godly-powerful enemies is fun and exciting when you manage to do it.

IMO if the Thing was in the 40,000 universe it'd be almost unstoppable because aside from it's natural biological weapons it'd be able to use any technology the civilizations that it assimilates uses, which is a big advantage over the Tyranids.

The Thing is also resistant to bullets and physical attacks as well. The people fighting the thing use fire because it's the only thing they CAN use. As Mac say in the novel, bullets only inconvenience the thing.

I.e. the gonorme and poison zombies.

Xenomorphs are from the Alien series of movies (and then subsequent games, most if not all of which are stuffty).
They're decent films, particularly Alien and Aliens. After that they get sillier. And AVP is just an unusual way to combine the two fandoms.
But they're still fun films, so give them a look. And if you like them, then also look in to Predator, Predator 2 (not as good) and Preadtors, and then Prometheus (A Ridley Scott film that gives some backstory to the universe of Alien), and then finally AvP and AvP: Requiem.

Also, there's the fact that the poison headcrab and fast headcrab possibly aren't the only kinds of headcrabs, fairly sure they can mutate as they go on like you said

the poison zombies are only the result of genetic modification by the combine, not by their own merit (same deal with fast headcrabs)
however, the gonorme is a good example of a headcrab completely changing the host, but they could never do it on the scale of the flood or other infections mentioned simply because they don't organize
even if there was a headcrab "mother" on earth, it could be very easily killed with conventional explosives or even bullets so it's effectiveness would be questionable

i always thought there was headcrab queens who would be used to breed large amounts of headcrabs, akin to the slig/modokon queens from oddworld.  also since the combine seem to have some interest modifying headcrabs, it wouldn't be farfetched that they'd modify them just so they could eradicate the flood/necromorphs similiar to how metroid were predators of the x virus in fusion.

Edit: Wrong vocabulary used. The point stands - headcrabs are defenseless, so they'll make a good snack for others.
