We call them Geordies (but this also applies to people around the Newcastle area), although the name is derived from sources besides the name of the city.

Serious though, we don't actually have the same nick-naming scheme as you do in the UK. We just name people by their race/nationality/intellect level (Lebs, Asians, Blacks, Bogans, Abos, richardheads (for rich people)). People don't really refer to cities so much as districts, so we talk about the Western Suburbs, the Hills District (which I live in), Northern Beaches, City (as in Sydney itself) and so on so forth. It's too much work to remember names like Wollongong or Canterbury.
