Get Ford Racing 2 &  3 if you like stuffty american cars and low budget solid racing games. Don't go for the first game tho, it's a  stuffty generic racing game with ford cars.
Star Trek Elite Force even though ths PC version is way better, you're still getting a really fun game and local multiplayer is way better than online multiplayer.
If you're willing to get a euro ps2 or find a way to play pal games, then get Road Trip Adventure Avenue (Gadget Racers in pal) which is the sequel to Road Trip Adventure and it improves upon many things from that game.

Now this will probably be my last suggestion, seeing how overly flooded some of the things I said in the thread were.
The Dark Cloud games aka Dark Cloud and Dark Cloud 2. The best way I can explain these games is that they're pretty much dungeon crawlers with town building and rpg elements in them. The second game is way better then the first, but the first game is easier to get into. Both are some pretty nice gems on the PS2.
