None of this can be used to harvest sensitive data. The basic functionality of my computer and whether or not I have Steam installed is nothing to complain about. Keep in mind the reason zero is for servers is because the only thing that actually has to have an inkling of fright about is someone who has a database of sensitive information. And even then, how would functionality steal that?
You have to keep in mind that Microsoft wants to stay in business and on the good side of the law. These insignificant data collection features have no bearing on personal security, and instead do exactly as they say: improve performance. Personally, I like Edge allowing me to browse more efficiently, so I'm not going to turn it off in fears that Microsoft is going to use my research browsing against me.
