Not sure if it is possible but:
More advanced plane control I.E.
/\=Push down
\/=Pull up
>=Rudder Right
<=Rudder Left
W=Increase throttle/Move forward
S=Decrease throttle/Move backward
A=Rotate L
D=Rotate R
It would give more control for People that are more experienced with Flight sims/Other games
Suggestions?

The flight control right now is just like that.

Talking bout ACTUAL arrow keys when I use >,<,\/ and /\
And I mean throttle with the W and S
Like instead of moving forward at max speed on the push of W
it increase speed every time you push it

Go into Options/Controls and set Turn Left, Turn Right, Look Up and Look Down to the arrow keys. Turn on Steering Auto Return in the Advanced options and disable Strafe Steering. The plane should control similarly to what you have described then, apart from the throttle parts.

I've found that planes I am flying stall if I try to go directly vertically for too long or in an odd direction. I can't control them for a few seconds and get stuck.

Yeah planes already do stall.
