If you can't find your plugins folder then you aren't using bukkit.
If you can't find your server folder, it's where the Minecraft server .exe/.jar is. Whichever one you're using. Which if you were using bukkit, you wouldn't be using either of them.

edit: SSP? Doesn't exist. All bukkit mods are SMP.

Vines = either Nandondalt's More Trees mod or Mike[numbers] Greater Greenery
usable monster spawner = Risugami's Spawner GUI
