I want to have a redstone current going on, and I want to be able to interrupt the current somewhere along the wire in some way that requires use of a lever, but when the lever is switched back off, I want the wire to return to its original form, without having to go to the wire and replace it myself

Have the wire be powered by a torch while the lever is off, and run the lever's wire through the block that the torch is on. It'll turn off the torch, which will turn off the power of the wire that the torch is powering.

does anyone know of a way to interrupt a redstone current without it causing the wire to break completely?

There isnt one unless you want to use a lever.

This is not a 24/7 server, this server will go down later tonight.  There is also a T-storm in the area, if the server goes down for no reason, it was probably because the power went out and there is a 99.9% chance of the server's save file getting corrupted.

Have a piston that moves a block in and out of the current. The current will power the block so that it goes through to the wire on the other side, and when it's off, no power.
