I've tried just straight up attacking them. Which just makes them poof away.

I've tried right clicking them and they just talk to me.

I just watched a video, and he was attacking them with a gravitite sword...

they poof away and teleport somewhere else (behind you usually)

You must be doing something wrong if they aren't coming back. Sometimes they might teleport outside the dungeon or in different rooms, but they'll always teleport back to you and fight until death

How do I attack Valkyries?

You insult them with a harsh remark about their current weight

But norly, they just teleport once you hit them as far as I know. I dunno if you can kill them.
