I hope they make pyramids and ravines and stuff and live in the pyramids so you go in and like there are 5-10 endermen/farlanders and they like stare at you and like, since it's such a small room you've already looked at two of them so you have to kill them and their families because you attacked a nearby enderman like the pigs so yea

Imagine if the endermen could morph into other creatured and would be noticable by a very slightly darker tint to the skin, and when attacked they would morph back into their endermen form.

Worse yet, imagine if they could morph into blocks ;-;

They make pyramids during the night, and hide in them during the day, if you enter one during the day, you're so forgeted, unless you kill all of them. This could allow fan fictions from the enderman's viewpoint about a monster coming and killing their families and whatnot.

I think this would be an exiting way to add scaryness.
