Lots of stuff doesn't look to good in Minecraft. It would be cool if skins were able to be 8x, 64x, etc. like texture packs. I saw somewhere someone had made one somehow, and they got a good amount of detail on it and it actually looked kind of good.

like hats and gas masks are better then they are now.

Yogscast asked them some time ago if they could have hats extended by one pixel, and Notch said no. They mentioned it in some version showcase video in The Nether with Fumblemore, when they discussed how they couldn't give him a wizard hat.
