I really doubt any of us would have the balls to do what we claim to do.
I do.
I'd grab the giant stick in my room that I have for unknown reasons, then I'd grab the largest knife in my kitchen (which is about 1.5 ft long), and I'd take my mom's car, and drive to the nearest Wal-Mart, find a larger car/van in the parking lot that I can take, I'd fill it up with canned-food, then I'd drove to Home-Depot, and find a 5 ft metal rod to replace my stick, and ditch my knife, then I'd drive to the nearest Harbor, which is about 25 minutes away from my house, I'd find a boat I'd could use, unload the minivan, and drive off to sea.
Every now and then I'd go back to the city to gas up, gather supplies, and search for more food and survivors to help out. I think I'd last for maybe 4 or 5 years unless I find a bunch of survivors.
Also, I have no problem with leaving my family behind. Leaving my girlfriend might be a little hard to do, but if she's with me when the infection spreads, I'd take her with me. If she's not, then I'd have to leave her behind. I can't take that kind of chance.
