It wasn't a matter of not being able to see it. I've just never seen it underground before.

a few demonite ores can spawn away from the corruption a little bit underground
it's rare but it happens

Doesn't defeating the Eater of Worlds spawn more random demonite?
EDIT: Checked the Wiki, doesn't seem to say anything.
I remembered more of it being spawned from something, can't remember if that was it or not.

spawn conditions for antlions are pretty loose

Today was my most eventful day in Terraria history. Things I did.

- Killed Skeletron.

- Killed Cthuhu twice in five minutes.

- Killed Wall of Flesh.

- Looted the dungeon.

- Broke twenty or so demon altars.

- Broke a shadow orb.

- Meteor landed (yet to find it).

- Mined tons of mythril and cobalt.

- Went to hell.

- Wired my ENTIRE house to turn every light off with the flick of a switch.

- Obtained many weapons.

- Got five or six new NPCs.
