Whenever I sap, I have stuffloads of enemies upon me, and then Engie just un-saps his stuff.

The most effective way is to sap the sentry and then wheel around and stab the engineer. If the engineer doesn't repair the sentry and instead tries to kill you, backpedal while firing your revolver.

You do not need extra damage for a gun that can do 50 damage a shot.

What I would do is wait until the engie is wrenching his sentry and backstab him and quick-switch to my sapper and sap his stuff. It doesn't work where there's more than one sentry/engie unless you have the YER and the other engie(s) is very unaware.
