One day in Oblivion I traveled to an INN. I went upstairs, went into an empty room and shut the door behind me. I crouched down to make sure I was hidden (and I was hidden). So I went to steal some of the items in that room, guess what happened. The loving imperial guard saw what I was doing through the loving ceiling, when he talked to me the camera just panned to the floor and zoomed in to confirm this.

It could have been the weight of the item you were trying to steal. Or the size of the boots you were wearing.
Although I do hate that the Imperial Legion only seems to recruit psychics. They'd better take line of sight into account when sneaking in Skyrim.

in that video the guy wasn't crouched

It could have been the weight of the item you were trying to steal. Or the size of the boots you were wearing.

The item weighed 1 pound and I wasn't moving at all.

Well then the guard's helmet must have been enchanted with Detect Life. :P
Wait... What?
The Unmarked Cave was apparently part of a quest that didn't make it to the final product, a quest that may have involved a Red Queen and a Black Queen, judging by that rumor and the "Black Queen's Hall" zone of the Unmarked Cave.

The rumor of the Red Queen must have been left in the game by mistake. It's so puzzling.

I was crouched and even if I were standing they still shouldn't be able to see me through a ceiling.
