does the game actually go into that much detail where each dwarf has like, unique traits and stuff? i already have an isometric 3d map viewer and texture pack so i can understand it better. how do i view each dwarf's name when they do stuff?

Nope, but you can spill a creature's guts, cut them off then strangle it to death with them.

You can use the "v" key to [v]iew a dwarf's current job, name, status effects among other things. You can use [k] to examine them and you can bring up a page that shows their traits, likes, dislikes, mood modifiers etc.

Yes, every dwarf is unique. You can view their thoughts, description and health.

Ok I have mined a cave hting out into a wall following a tutorial, but there are mudstone piles left behind. how do i remove them?
They aren't "piles", they're actually usable stone. Either get a mason/craftsdwarf and make something with them, or you designate a dump with {i} then move over them with [k] and press [d]ump.

You can also do [d] {b} [d] to mass dump.

I built stares, but it keeps getting replaced with a rock every time I send someone to build it.  Did it collapse or something?

Nope, it's usable materials.  Just that the dwarves climb the stairs the second the rock is made.

It's been a bit since I've played, but you should be able to do it if you look at a dwarf and press enter, and see his or her "Thoughts and Preferences," at least I think that's how it's done. Look is K, by the way.

In adventure, can I get a back pack if I don't start with one? I didn't one time and now I can't pickup anymore then 2 items unless I wear them
I also can't equip a pouch I picked up.

I don't understand fortress mode very well.
I'm not getting any announcements, and I set designations and jobs (not sure if i did it right though)
But I set a meeting zone and they're all sitting around there.
How do I get them to do stuff?
Also how do I remove zones
I want to get rid of all of them because I organized them badly.
