I've tried so hard to get into these, but they've all bored me to death from the get-go, and I don't even dislike the genre at all, but god damn, it just feels like nothing noteworthy really happens. Admittedly, I haven't gotten past the first couple of episodes, but should it really take that much time?

And I guess that's the point, to just have a fun little portrayal of daily life, but it's not a good one if it's boring as hell to watch.
you really have to be in some depressed state of "i wish my life were something else" to really get into slice of life. that or you have the aptitude to appreciate character dynamics/dialogue over an exciting premise/setting.

i really feel like this a lot, sometimes i can barely watch an episode and feel like stuff when i'm only halfway through and sometimes i feel like i could just watch SoL forever. it just depends on what i feel like.

I agree from the standpoint of judging an anime solely by its genre, but mechs are just uninteresting to some people. Sure, an anime that includes or is centered around mechs can be good, but if you're not interested in mechs, it's not going to be the mechs that make it enjoyable. Not for me, anyway.

I like shows that revolve around classical japan, during the time of samurai and stuff. Not so much ninjas, despite my name.
That combined with a good story and nicely made fight scenes. No Filler or at least very few or short fillers.
