Depends on the dialect.
Most if not all non-America(america as in continent, not the nation) countries spell things like such differently than the United States.
For example, gray(US) and grey(UK).
The european dialect of English often has u's aside their o's in words like color/colour.

It honestly doesn't matter though. They're all read the same way.

Grey and colour are the UK spellings, British colonies or places that used to be under British rule may still spell them that way.

Both are correct depending on where you live, but since my tea is Earl Grey and not Earl Gray, I'll be on the Grey side of things.
