I'd imagine a military shooter would have fairly complicated helicopter controls, even in a mod. People still get the forgetwad simple BF3 helicopter controls and accidentally crash into things.

Helicopters in Arma 2 are rather easy to handle after a bit of practice.
Really after some practice in the armory or in the tutorials you can fly and land helicopters with ease.

how difficult is it to actually get into a helicopter, forget the controls up, and crash it straight into the ground.

Actually if you have decent experience with flying helicopters on PC games, it's really easy. Basically WASD controls tilt, XC are rudder, and QZ are raise and lower altitude. Though you can swap WASD for mouse axis and it gets 10x easier.

45 min of arma helicopter piloting and I mastered it.

Plus only people who know how to fly it are allowed to.

what happens to all your stuff if you log off? does it still stay in the same place?

Your gear can go server to server and stay with you.
Map based objects (Loot, Vehicles, Tents) are all server based.

so you can effectively hoard vehicles and set up camp on one server, go to another to get a whole bunch of loot, and then go back to have lots of stuff

so someone finding their camp, crashing their helicopter, and destroying their vehicles while the team is logged off isn't really that far fetched.

the problem is people hide them all the way to the edge of the map or outside of the map
