For example, buying a copy of Mount & Blade from a store and adding it to Steam even if you didn't buy it there?

Not very.
I think in your steam library you can click "Add game" (bottom left corner)
Click the check box next to the game of your choice.
If you don't see it, click browse and find the shortcut file location.

not sure about mount & blade but my friend bought Terraria in a store when he went to England and it had a steam key
