I'm being a huge bigot by saying men have snakees and women don't.

Males* and females*. There is a biological/psychological line between love and gender, as Headcrab Zombie said. The only time I personally ever bother being specific about it is if it actually matters at the time, such as when some moron makes a topic with a title that compares transloveuals/transgenders to "I'm a lizard!" and then claims he's somehow not a bigoted dumbass.

I have very minimal actual knowledge of this but I'll try to explain what little I do understand.
Essentially, the brain and the body do not always properly connect in terms of hormones and such: The brain can develop as a woman, and the body as a male. This, obviously, is not something anyone notices right off the bat, and the person in question has no real way of noticing until later in their life when they're a bit more knowledgeable in the world, causing the "decision" that they are the opposite gender.
Of course, I could be entirely incorrect and people are free to correct me if I am, that's just my understanding of it.

Comparing such to "I'm a lizard" or "I'm a tree" which are entirely different species and even a kingdom apart is a biiiit closed-minded.

Perhaps you haven't read the thread. I'm not against people getting love changes, I understand this is a legitmate mental disorder and just like any mental disorder I'd never judge them for it espically if they were getting the help they need.

If you're dating someone who hasn't had a love change, but wants to be referred to as the opposite gender to what they biologically are?
Usually, most people tell others what they want to be known as. If they don't, you don't carry on dating with them, because they are lying to you.
You're just scared of having someone trick you. Which is fair, but unnecessary. That does not happen much at all.
If your relationship manages to go so far with them not telling you about themselves, then you're not in a good relationship at all.

Rules don't just disappear because someone identifies as a different gender.

Actually trans people are fighting for (and in some cases, getting) their 'right' to use the facilities of their gender 'identity'.
This one is a more valid argument than you think.

Unless you actually catch them jerking off you can't do anything about it either.
Because what if they "really were" that gender, then you'd be seriously insulting them and depriving them of their rights.
