But if Christianity is just part of this "cycle", then why didn't it just immediately get toppled over and forgotten about? Why wasn't it just instantly disproven? Because I think that if it has held its own for this long, it's gotta have at least something to it.

It sure wasn't toppled over and forgotten about like Taoism (Founded in 2nd century BCE), Confucianism (5th century BCE) Buddhism (6th century BCE), Shintoism (6th century BCE), or Hinduism (1st Millenium BCE). It's only by the grace of God himself that Christianity lasted this long. Who even follows those other religions anyway aside from the 1.76 billion people who still do so today?

Have any of those religions been disproven? I mean all of them lack proof (hell Confucianism is less of a religion and more of a set of philosophies, so it doesn't quite count. I believe Taoism is similar in that respect) aside from their holy books so really they're sitting on roughly the same territory as the rest of them.
One of the reasons why there's 1.3 billion Catholics is because the people who happened to be into massive amounts of colonization and exploration and imperialism (Europeans, mostly) were also really into their religions. Their flavor of the millennium just so happened to be various forms of Christianity. What happens when people decide to spread around all over the place is that their cultures are spread into the native lands. What happens when people decide they really really like their religions more than other peoples' religions is inquisitions.

Besides, Greek mythos wasn't immediately disproven either. Lots of Greeks (and also the Romans because their Pantheon was effectively the same thing minus Athena the best goddess) legitimately believed that there was a bunch of gods living up on a mountain and that the one that controlled the sky and stuff could not keep it in his pants and that caused problems for humanity all the damn time. Whether or not it was delivered via poems is irrelevant, it was still a religion in its own right.
With better pacing than Christianity I might add.

Science constantly corrects itself. When something gets proof that goes against it in scientific knowledge, that idea is replaced with what is now thought to be correct. Things such as evolution have lasted since the 19th century without any evidence against it, and lots of observations for it.

I honestly find it hard to think of a way life could work without evolution — most animals aren't perfect copies of each other, they mutate all the time. Some of these mutations will affect the likelihood of a particular creature surviving and then whatever DNA was mutated will probably get passed down to the creature's offspring. Over time these mutations build up, like a snowball, and new species could even be created.

The Christians who think the bible has any truths involving anything other than what life was like at the time it was written are listening to a couple thousand (Old testament) to couple hundred (New testament) year old book that doesn't constantly get revised.

Religion isn't always a bad thing, but it is not something that should be used to explain how and why certain things are about the universe. The only true way to do that is by conducting experiments and explaining the observations. Over and over, ad infinitum.

You've seen all these arguments a thousand times if you live in my country. Northern Ireland has a mostly creationist government and the government is connected to a anti-gay, anti-evolutionist group called the Caleb Foundation who basically try to take evolution out of our museums.
