I got Skyrim a while back, and I hated it so much. It was glitchy and annoying as hell. I ran away from a guard which worked, I didn't see him for another 45 minutes, then he suddenly appeared and killed me. One mission took me 5 hours of doing it over and over again because my weapons weren't powerful enough it seemed (I had to kill 3 armoured guards at once), I spent 2 hours trying to walk to the next mission as a dragon kept following me and killing me, and my under powered weapons couldn't do anything, and most of the time, the mission markers were messed up.

So how can I enjoy this game or become good at it, because every YouTuber I watch playing Skyrim never have these problems, I spent FIVE hours on one mission.

I would do some simple quests from Riverwood. Also make sure your difficulty isn't too high.

i was gonna say mods to make the game actually challenging instead of a simple stroll through the woods but it looks like you need some mods to make the game easier

it sounds like you took the sign the game gave you that you weren't ready for the mission yet (the enemies being too powerful for you), shat all over it and just kept trying at it for no reason until it worked

Most NPCs are pretty easy to fight once you hit level 10 or so.
I'm guessing OP is either extremely underleveled (as you mentioned), has the difficulty too high, or is just bad. Or all three.

Limit your fps to 60 if you're on pc.
