Cheat engine, it's simple. All I know how to do is edit quantity of items and get infinite health.
I have not been successful at changing brick types, it's one of the harder things to do as you can't move an item from one slot to the other, or you have to start the process all over again.

Try using the memory region.

I'm actually quite good at using cheat engine.

Just use NBTEdit. Much easier to use. You still need the block and item ids though. There's no gui.
