I've never actually seen silverfish ingame

They only spawn from Stronghold stone material. A lot of people still haven't even been to Strongholds yet, so this makes sense.

They are. You hit one brick, one spawns. You hit it, more spawn from nearby bricks. They're extremely dangerous, probably the most dangerous enemy in the game because the only way to stop them is to get as far away from the Stronghold as possible before attempting to kill them all. Otherwise, you drown in a sea of them.
