Over time they would over populate the entire world. Unless there were to be a limit.

I don't think players would be happy with Villages expanding over their landscape, having to clear them. I mean, at least by default. Turning off structure generation would also suck.

Just start a new world. You can load in an old one and it will convert it, but I think it backs up the old world as level.dat_mcr, so you'd have to switch them back to go back to the older game version.

The wiki says Villagers will have babies fitting roles not filled, but no matter how many priests, librarians, and blacksmiths I kill, I still only see Farmer babies. There is pictures of the other kinds... Why isn't this working?
