tell guy to cut wood, disable all labors but woodcutting for him, designate wood, and he still won't pick up an axe even though I have like 4 of them (all unforbidden)

It could be:
Marked for dumping
Forbidden (double check)
Melt order pending
Attempting to be equipped by a soldier/other woodcutter
Marked for hauling to more appropriate stockpile
etc. etc.

this happened to me

turns out when military units use axes all axes are dumped in a stockpile afterwords

make training axes out of wood (if you have any...) and use them to chop trees, works all the same for chopping, combat is a different story

apparently making more stockpiles if you weapon stockpile is full can also help

like i said, more axes and cancelling all military activities fixed it

i know how to play but my terrains horrible and no one joins i have about 8 dwarves and thats it with armor and stuff

I remember in 40d legendary wrestlers could stop sieges, now wrestling is useless. It was hilarious, when I heard that 'wrestling was useless' I was like "forget this" because weapon training took forever and it never worked, either training is faster or my dwarves got a kick in the ass because I have atleast 1 dwarf armed with every kind of weapon except crossbow, and plated in steel.

Dry moats are better
If you get knocked in, no amount of swimming skill can save you if there's no exit

Just make choke-points and put cage traps in them.
