You mean mining, or stuff already mined? You could just make random items out of it.

You could make items out of it, I have never actually found stone or dirt, I always get chalk or sand, but that should still work.

You can create a 1x1 section designated as a dump, and then mark large amounts of stone as a dump

Most fortresses are dirty, its just a way of life.
