That's really cool.
I wish they'd put Directors Mode or something similar in the Xbox One/PS4 versions.

But at least it is in the PC version, and it's one of the features that does make me want the game on PC.
I'd love to play as a police officer and just forget around with stuff.

You still can take taxi missions in GTA 5, not sure about the firetruck yet, also here's my online character.

in gta iv you could get in a cop car and do cop things
like there was this little computer in the car

Yeah, I'ma kind of upset they didn't have more jobs available for you when you get in certain vehicles.
You used to be able to get into Fire Engines, Ambulances, Police Cars and Taxis and just start doing jobs for them for money.

Then in GTA 4 you could only do it in Roman's taxis, or in police cars (where there was a set amount of missions to do).

And now in GTA 5 you can only do it as Franklin, in the Taxis he owns, IF you purchase the Taxi place. No Emergency Services at all. Yeah, it's realistic, but I don't mind losing realism in exchange for more activities.
