well besides just getting good, you could level up a bit more? or use a summon those exist too

I took them on at like level 30 lol

You can block almost all of their attacks (not the fire) with a shield and enough stamina

using iron flesh with a gigantic hammer and clobbering someone in light armor when they try to stagger you would be pretty funny
