First off you REALLY shouldn't do a genocide run as your first venture through the game, it's a terrible idea.
Second off you aren't in a genocide run, you're just in a neutral run. nvm Maxx is in the genocide run, my bad.
Third, Undyne is probably one of the most difficult bosses in the game so I wouldn't blame you if you die a lot, but 40 is a hell of a lot. Get used to her patterns and time your reflexes better, also there's a better equipment than the notebook and glasses that can be found in Waterfall.

Also with the way things are going right now, you're gonna have a bad time.

Definitely except this isn't |Undying Undyne|, this is the regular Undyne! She's easily the hardest boss in the neutral route, if you try killing her at least.

True, though I found some of the other bosses to be more difficult in the neutral route, but undyne CAN be the most difficult if you don't know how to do the fight.
