It's actually not that hard, just get into an equatorial orbit around Kerbin, look for a planet you want to go to, fiddle around with manoever nodes for an hour and turn your engines on in the proper direction. Phase angles are easier though, but take longer. It's like waiting for the other planet to be in the right spot, which takes ages.
idek what these manuever whatnots are, i just do basically the orbiting tutorial over and over (reach lower point in orbit, raise highest point to other orbit).

how would i build something to take me to another planet?  everything i've built to reach Duna is unstable as forget and falls over easily.

I could just give you a .craft file of one of my interplanetary (Duna or Eve atm) ships with a rover on it, but it's a billion times more fun making your own rocket and getting it there. Us this as an example maybe.

is flying an asparagus-staged craft any different than just flying any regular craft?  the rockets i've made have asparagus staging and the staging is set up properly, but it's just that with the rocket i'm trying to send to Duna (which has a lander + a bay carrying two satellite probes) it's hard to balance between having structural stability (despite having a stuffload of strut connectors), enough fuel (despite having a stuffload of asparagus staged boosters) and enough thrust (because it all gets so loving heavy).

EDIT:  I may just separate the lander probe and the satellite-carrier into two separate missions due to the mass involved

Maybe you should go think about this: How could all of those kerbals on top affect my weight?

If an engine is thrusting against the thing it's supposed to power, it will cancel itself out and have no use whatsoever. If you press F3, does it say 'exhaust from engine x damaged y'? At any rate, only the back engines are producing useable thrust for your plane.
