best game ever poll was just a popularity contest. it makes sense that undertale would win because it came out like two minutes ago and people are pooping their pants about it, and has a more active current following.

now, if you asked me right now if i thought undertale were better than any of the games it went against, i would absolutely say "yeah." to what degree is that novelty, and to what degree is it genuine admiration? hard to tell. but i bet you nobody actually changed their opinion or voted against their gut just because some guy on the internet told them their opinion was irrelevant or invalid. maybe they did it out of spite, maybe they did it as a settlement, but you don't typically just change people's preferences by saying "we deserve this!!!!!!!!!!!!!!!!"

In something with as many subcultures and genres as videogames do I'd say the best answer is what games that are praised the most on average.

It's still subjective to a point, but there's still some order of which a game can be judged as one of 'the best'
"Most praised" doesn't equate to "best." The former can only be objective if you get a little more specific with the metrics, like equating praise to some type of score. The latter remains subjective, and just because you have some sort of objective measurement that's roughly comparable in scope doesn't mean you can socket it in as the objective definition of "best" just because there isn't one already.

Besides, that list must be wrong, because Crash Team Racing isn't on it, and a bunch of games I haven't played are.
